Hello Jeff Flowerday, in my opinion, it is easier to rip CDs to wave files. Then check for HDCD and if it is HDCD, convert them with hdcd.exe to 24Bit wave files. Convert those files to flac and tag them.
Rip old CDs with de-emphasis flag to wave files and use cddeemph, WaveEmph or Sox to undo the emphasis and generate a new wave file. Convert those files to flac and tag them. All done! Why that way? You have to do the convert process just once. You don´t have to change custom-convert.conf. Any Squeezebox Player (Hardware and Software) is able to play those flac files.
