What's changed between the two servers? Hardware, obviously. Software? Network connection? Start by running some bonnies on the two servers. If those look comparable, then you're looking at network issues. I've seen faulty network switches cause problems (though the problems there often manifest as "dropouts" in live recordings or playouts).
