Open ports with software you can talk to on the other end will always
pose a security risk. There's no doubt of that. However, Linux
inherently offers fewer risks in terms of privelage escalation, and I
have never heard of any security issues arising from the use of software
such as Icecast that haven't been promptly fixed. I'm not sure I can say
the same for the Windows based streaming servers but I may be wrong.

Basically: You're always at risk. But Linux offers many options to
minimise that risk and limit the impacts of even serious security flaws
in products, most of which are inherently present, where Windows does
not. XP particularly because it's not even being supported with new
security updates right now (as far as I know - I believe it end-of-lifed
back in April?)
