If it's in the same machine, I'd say make an fstab entry that makes that
drive's mount point /var/snd. If there's something in the /var/snd
directory (usually the test tones and Rivindell ads by default) I'd
remove those things before you mount your /var/snd volume.
Symbolic or hard links do work too but they are not exactly the same as
a mounted file system and they have some limitations that aren't
immediately obvious. Some recursive functions don't follow links by
default for instance. You might for instance tar part of the file system
to move it somewhere and you'll find that the tar archive contains a
link but not the files you would see if you did an ls of the
sub-directory referred by the link. I'm not sure a link would cause you
any operational problems for Rivendell but the fstab entry and a mounted
file system is the best way.
We're running multiple Rivendell clients at our station (we have 2
studios and a ripping station) so we have a common /var/snd and database
server on a separate machine. We have mounts in the fstab tables on the
client machines to mount the nfs file system to the /var/snd mount point
on the clients.

I've got a backup of the database, I make two that go to separate
drives every day. I should also have added, the new Rivendel 2.x.x
system is already installed on a separate machine.
What I'd like to do is to take the separate drive with the audio files
out of the currently operating machine, put it into the new machine
(with Riven 2.x.x) and then make the new machine use the drive with
the audio content as var/snd.
With our previous RAAbuntu version, I just made a symbolic link from
the separate drive with the audio files to /var/snd. Someone told me
this isn't as reliable as editing our fstab files, but I'm not sure if
this is true.
Is that the procedure you'd advise too?

As far as Unix file systems go, Centos and Ubuntu are exactly the
same.
Make sure you make a backup of your database and keep it on a
separate drive, I kept ours on a thumb drive. When you load the
new version of Rivendell, it will install a new blank database. It
your database happens to be in the way it gets smashed. Once the
new Rivendell is all installed, restore the database from your
secret stash and Rivendell will convert it to the new schema. The
/snd files don't change.
If you can, as with any big upgrade, a complete backup is a good idea.
