Most of the current Apple hardware has S/PDIF optical (TOSLINK) embedded. We've been using that with level converters to drive out console as an AES digital audio input. Very clean audio. We've used for record and playback with a number of packages without a hiccup for over a year. There is the line (-10 dBm unbalanced stereo) analog too but much more of a compromise. If you need more I/O then you have to go back to USB right now. I don't know of any AoIP drivers but of course BA has those. I just don't know how easily they would port to OS X. Apple is just ahead of the pack on this. I think all the different flavors of PCI card slots are on the wain, At least the full height versions are almost extinct unless you build the computers yourself from parts.
If we had AoIP on OS X that would be all we'd ever need.
