I strongly recommend you use the minimal install. I think you won't
need stuff like office suite or other desktop-oriented applications.
Once you have a minimal install (no GUI yet) you can build your system
to fit your needs. It's simple.... "yum install ..."
For CentOS 5.x there are small problems in terms versions (too old
packets version in repo)
For CentOS 6.x there are small problems with building process.. both
of them are solvable. Have a look here:
