 rsync
 copy all of what you want onto the new drive.
 When it finishes, stop the machine. By that, I mean take it off-line, not shut 
down.
 do an rsync -u
 when that finishes, shut it down and swap drives.
 Bring it back up.

 Should be no more than ten minutes off line if I did it. Maybe less.
