Replying to myself for posterity.
I have played around with this for HOURS, but finally figured it out.
On the wiki, it says that x11vnc is set up "out of the box" on the
Rivendell appliance. That is TRUE for appliance v1, but false for
appliance v2. It is installed on appliance v2, but not active (did
someone forget a step? :-) ).
To get it going, all that is required is to follow only the second
command in the first step (the .vnc directory already exists), and the
second step (you may have to create the .x11vncrc file) on the wiki
under "Generic Configuration using x11vnc with KDE".
Since appliance v2 doesn't use KDE, don't worry about the third step.
Just load up the GUI "startup applications", add a new startup
application, and throw x11vnc in there.
Of course, you could just use appliance v2's built in "remote desktop",
but I *assume* x11vnc is better and probably why the developer chose to
install it.

x11 does work for me fine, but I have to start it manually.
