Hello Fred,
Does the latest appliance installer iso simply grab /dev/sda and
overwrite it or does one have the option on install to choose which
drive to earmark for destruction.
Would like to install onto a 128GB USB drive for portability and demo
purposes but don't want to chance losing the sda drive on the machine I
use to install it on.
Can use the safest way and disconnect all HD's except the thumb drive
but wanted to check first and see if option was available to choose first.

Correct. If it’s in ‘master’, that basically means “will appear in the next
regular release”.
If a particular fix or feature is absolutely critical to your situation and you
can’t wait that long, then you do have the option to check the code out from
GitHub and build it yourself. Doing so is way beyond the scope of this e-mail
though; see the wiki for some guidance.
