Yes, my problem was that apache in debian/ubuntu now behaves differently than most (if not all?) software : putting a config file in the appropriate config directory, then reloading the service is not enough; you have to use the a2enconf/a2ensite or whatever command so that the config file is actually accounted for. (that unintuitive behavior is probably well documented, somewhere in a thousand lines change/upgrade log…)
