None, there is no difference because they are the same log file. When
rkhunter ends its run, and closes the log, if the user has set the
'copy_log_on_error' option and there is an error or warning, then RKH
simply takes a copy of the (now closed) 'rkhunter.log' log file with the
'cp' command and renames it with the date tagged onto the end. That's
all it does.
