I have had success with the Mozilla import/export method. I have not yet
tried the Outport utility (http://outport.sourceforge.net) that Ximian
mentions.

As far as contacts, you can use the previously mentioned CSV export and
convert the file to VCF with Evolution's csv2vcard.pl script.
