As for the browser default, I have run Evolution 2.0.2 and FireFox
harmoniously for some time, though I do have it set as the default
browser/html viewer in both KDE and Gnome. 

For KDE, you can set this like:
KDE Control Center > KDE Components > Component Chooser > Web Browser
in the following browser = /path/to/firefox

In Gnome, it is in the Gnome Control Panel... custom web browser or URL
Handlers...http/https
/path/to/firefox "%s"

If you are using another window manager, then this may not be useful
information.

The text modifier icons are only available for HTML email.
The default composition is plain-text (I think... cannot remember if I disabled 
it on purpose, but would have if it defaulted to html).
