I'm thinking that the Starbucks on the corner of North McCarran at Pyramid would work. 6pm should be late enough for all but the truly dedicated to get off work, but early enough to avoid staying up all night with coffee jitters. :) I'll be easy to spot: just look for the guy sitting with a blue-vested German Shepherd.
