You will have a kind of "database access layer" (a set of classes who access
the database). Summarize them into a package and make them depend on the
external database in the component diagram. Make your application access
this classes and not the database directly.

say, you have to produce a class diagram for a system that needs to access
an external database. would you actually show the database on the class
diagram (as a stereotype class maybe) or isn't that necessary?
