You are right when you say you can't put a stereotype directly from a sequence diagram. But if you look at the object that your trying to change the stereotype from the actual browser(or from any class diagram containing that class) then you have no trouble setting the stereotype. What I personally do is to have a class diagram which is the VOPC(view of participating classes) that actually realizes a particular Use case. Then I do my sequence diagrams for a particular scenario with the VOPC in mind.
Also Max suggested setting the icons for showing your own stereotypes. There is a few icon already predefined in Rose 2001. Take a look at the Boundary, control or entity stereotype. To see the icons you need to go under Tool, Option, Diagram Tab, make sure that stereotype display is set to Icon.
