Since this isn't an often event, you would probably be better off with gauge and larger step unless you are adding these up over time (in which case, use derive to count the difference between steps). Depending on how 'blocky' you want the graph to appear vs higher numbers (per 5 minutes, per hour, etc) just enlarge your step size to consolidate more events into the time period you are checking. If you check your logfiles every hour, then set your step to every hour and update with the count of events for just that hour. You will get an hourly block graph, graphing over a longer period of time though, the blocks will decrease in size of course.
