The easiest way AFAIK, is to have your own central rsyslog server with
a db (mysql).  Then use tarnsap (http://tarsnap.com) to copy either log 
files or db dumps to it.

It uses AES256 bit encryption among other things so it can even story CC 
related data if needed.

FWIW, tarnsap uses s3/ec2 for storage et al.
