As said, let pkg-config figure out the correct flags. If you've installed libestr into /usr/local, and pkg-config doesn't find the libestr.pc file in /usr/local/lib/pkgconfig (it should by default), you can set PKG_CONFIG_PATH. That said, it seems you are a bit unexperienced in building packages on your own, so my suggestion would be to just use the packages as provided by your distribution.
