Re-building an RPM is easy. Trouble is going to be all the other packages on RHEL/CentOS that depend on gnutls-2.8. I am going to rebuild gnutls-3.2 as RPM on a test RHEL 6.2 box and see if the upgrade is smooth. If yes, I will post how-to and source.
Even so you need to be careful because future gnutls packages from RHEL/CentOS will want to replace your hand-rolled RPM.
