Hey Simon, I think you just have to modify the Scrip with the action "Notify Requestors and Ccs" and set it to "Notify Requestors" instead.
RT -> Configuration -> Queues -> <click the queue> -> Scrips The ones I'd check out from the defaults are "On Create Notify AdminCcs" and "On Correspond Notify Requestors and Ccs with template Correspondence".
