I'm using Object.extend.

    Object.extend(Ajax.InPlaceEditor.prototype, {
      onLeaveEditMode: function() {
        alert("onLeaveEditMode");
      }
    });
    new Ajax.InPlaceEditor('editme', '#', {rows: 15, cols:40});

or

    var editor = new Ajax.InPlaceEditor('editme', '#', {rows: 15, cols:
40});
    Object.extend(editor, {
      onLeaveEditMode: function() {
        alert("onLeaveEditMode");
      }
    });
