Unter Windows gibts sowas wie Camtasia Studio (aktuell bei uns im Einsatz):

Unter Mac OS ist die Auswahl relativ groß, habe keine Ahnung welches
Tool da derzeit das Beste ist, da fehlen mir entspr. Erfahrungen:

Unter Linux habe ich sowas noch nicht probiert, aber bin auf folgenden

Falls Du etwas kostenloses suchst, schau Dir mal Jing an, glaube das ist
auch von Techsmith.
