Keith,
I spent most of 35 years building and flying free flight, control line and
R/C electric and IC model airplanes. It was not unusual to spend 100 hours +
to construct one from plans. I was never a total scratch builder, always
using someone else's drawings.
So these car and scenery kits seem to go together pretty quickly for me,
compared to model airplanes. I have even had some success putting together
Plasticville structures and then massively kit bashing. Most of them just
snap together in minutes, but of course require lots and lots of work to
make them look good enough for  a scale layout. I personally enjoy the
challenge of adding details, interior and exterior lights, etc.
As you probably know, there are some terrific glues available these days
that speed up the building process by light years. I use several types of
CA, Hold-Tite white glue, and others.
But you are sure correct in assuming that a guy or gal can accumulate lots
more kits than can be built in the average lifetime.
