I add a large brass nut to paint when I open a bottle as my clue to
when it is mixed the next time I use it. I haven't noticed that it
affects the paint.

I do not add thinner to the bottle of paint. Instead I use an eye
dropper to transfer it to a second bottle and add the thinner to it
there. I discard any leftover thinned paint.

My local hobby shop proprietor says there are more lines of railroad
paint than he can stock. He dropped Scalecoat, and for model
railroaders now handles Floquil and a line of acrylics. (The model
plane guys and the model car guys have their own paints on adjacent
racks.)
