As Ed points out, there is no single answer to your
questions. Possibly the best course of action would be
to look over the selection of track products currently
available to S here:

Then see what you want to do that's different or
better than the existing options. 

As a general rule, S switches fall into a couple of
catagories:

Scale - basically duplicate the look and function of
the prototype, cannot run AF compatible equipment
(non-scale wheels).

AF Compatible - work for AF and "highrail" or AF
compatible trains, but cannot run scale wheels except
possibly on the straight leg.

There are two groups of switches that work for both
scale and AF compatibile. One group, as mentioned in
another post, use "closed frog" designs. The second
are the turnouts made by Tom Stoltz which appear to
have hit some "magic number" dimensions which work for
both wheel types/gauges. I don't know if it is
possible to duplicate this function without actually
copying Tom's  design (which would not be a good thing
without his permission).
