Welcome to S.  Regarding rail sizes, you are correct.  S is 2.5 times N, so 
code 40 rail in N scale is equivalent to code 100 rail in S.  This corresponds 
roughly to most American Class 1 mainline rail.  Most S scale standard-gauge 
flextrack is code 100 (manufactured by Tomalco and Scenery Unlimited).  Tomalco 
also makes code 83 and code 70 flex.  Code 125 (really closer to 133) flex is 
made by S Helper Service.

I use code 83 for yards and secondary trackage, and code 70 for industrial 
spurs.  I am one of the unusual modelers who builds all of his track and 
turnouts from scratch.

Given your description of your interests, I recommend that you avoid so-called 
"hirail" (American Flyer compatible).  Use the NASG/NMRA track and wheel 
standards.  Track and wheel gauges are available for the National Association 
of S Gaugers (whether or not you are a member).  Go to www.nasg.org for info.

Most scale standard-gaugers use Kadee S or HO couplers (they operate 
interchangeably with each other).  Some use Sergent couplers, more prototypical 
in appearance, but they will not mate with Kadees.
