I use ballast from Arizona Rock & Mineral
(http://www.rrscenery.com/AZROCK5.html, phone [928] 636-9275). They have a
bewildering variety of colors and textures. While nominally HO scale, I find
that their mainline ballast is perfect for S. I use "CSX," a very light grey
ballast with some flecks of black here and there. For yards and spurs, I use
black cinder ballast. This has some flecks of copper-colored grit in it. I
also have a bag of their "ash"-- a very fine light grey.
I purchase mine in bulk -- 50 pounds, followed by a second order of 25 pounds.
