All lumber will expand and contract and change shape as humidity changes. Plywood is much more stable and thus better suited for layout construction.

Folks around here who experience warping/twisting/shrinking/etc. used green (undried) wood. Those who use kiln dried wood do not have any problems. Kiln dried wood costs maybe 20% more, but seems to be very stable if kept in a dry warm environment. Best way to save a buck on wood is to make a list of all the wood you will ever need for the layout. Let various lumberyards bid on the project.
