Lehigh Vally Models (I think they're still in business) has some of what you need. http://www.trainweb.org/s-trains/lvm/lvm.html These are "old school" kits. You get a box of lumber, cardstock, some castings and a large instruction sheet. Laser cutting hadn't been invented when these came out, but they build up pretty nicely.
