Lehigh Vally Models (I think they're still in business) has some of what you 
need.

These are "old school" kits.  You get a box of lumber, cardstock, some castings 
and a large instruction sheet.  Laser cutting hadn't been invented when these 
came out, but they build up pretty nicely.
