I am not really very technical. The only thing I know is that, in the past, I had problems using Sabily as a production system, because of the half-yearly update / upgrade cycle of Canonical. Those problems especially occurred when they tried something 'new', such as their controversial Unity desktop.
Debian does not work like that and has always been more stable, right from the beginning in the 1990s. So, I would suggest to give Debian a serious thought.
But as I said, I am not a technician.
