It sounds cumbersome to have to install a system-wide python distinct from to the default one. Python 3.12.3 is the default system python of the *current* Ubuntu LTS (24.04). It's true that Ubuntu will soon release a new LTS version (26.04), with a newer version of python, but many people will stay on 24.04 for a while. In this respect it would be preferable not to require Python 3.12.5 for Sage install, unless this is really necessary for some good reason.
