Also, you should know anecdotally that if you use a server for student notebooks, in general they have full rights over their notebook per default. Whoever is the admin of course can easily look at them too, but if you have them "Share" with you that could be what you are looking for. You could, for instance, require that students of teacher T_i "Share" worksheets with T_i if they want credit for them, or something like that. There is of course the problem that someone could be allowed to "Edit a Copy" where the copy is not actually edited (i.e. turning in someone else's work) but presumably that problem exists with all kinds of homework. You should also probably do some kind of secure setup, whether using a VM (which we do) or some other method, even though at this point those can still be taken down, if it is just your students and you make the URL accessible only on campus or secret to them, there is minimal risk. I know this is a little vague, because my admin has handled this for me, but David's links should also be a good start.
