That would be an interesting project. I personally know little about it, so would not be able to help formulate a proposal. A couple questions come to mind that you need to figure out for your proposal.
1) Can you actually compute a dynamical zeta function for a specific function? If so, which ones and how to do you tell? 1b) Is computing the first few terms a useful approximation to the whole zeta function? 2) After you figure that out, you can decide if this is large enough scope for gsoc.
