brew install pkg-config and try again. From your log, it appears missing,for some reason, configure:6572: checking for pkg-config configure:6605: result: no and this breaks everything in ./configure that relies on it. Yes, for some packages there are workarounds for corner cases which are meant to work without it, but I'd rather not spend time debugging them too much...
