Dear Wizard, I believe this plotting issue is one of the few outstanding issues for the OSX 10.6 port - see http://trac.sagemath.org/sage_trac/ticket/7095. However, my understanding is that using a 10.5 binary works fine, for some reason. Hope this helps!
