I followed a course once on elliptic curves. Here there was no automated checking involved but it instead you had to share your worksheet with the people who grade homework. That also worked quite nice. The sad thing is that the sage server of our mathematics department (https://sage.math.leidenuniv.nl/) is down so I cannot show you how the file looked like. But what it basically did was to use the regular text in the worksheet to ask the questions, and after a piece of text you had an input field where you had to answer it.
