The interchange logging to file, re-generates the file each time, you can
however have SA execute a command after the generation of this file (so you
can extract any data from the file).
OR you could use the db logging of it which will add new records each time.

Turned on INTERCHANGE logging and it does come back with the 
temperature, but it gets over written with each check.

Is there any way to build up the log so I can keep a record of the 
temperature over time?
