I'm a few Beta versions behind but under Setup > Alerts\SMTP\Primary >
Default to: setting, I don't see how it is possible to add a Person or
Team here?

The only way to do that would be to have a the default to a PERSON and
to use
the "schedule" as you have on the SMTP tab of that person

I'm primarily the only person getting alerts in our company, so in the
primary setting I have my email and SMS address. You stated the Keep
Alive messages were sent to the Primary address at the interval you can
specify. 

So instead of getting Keep Alive messages during the night I'd like to
be able to suppress them during a time set by myself. Is that do-able?

Is there a way to have the keep alive on a schedule? I'm looking to have
the keep alive not send during x time but resume at x time. However I
would still want the primary email/SMS to alert to all other downs.

It's a scenario when you have a small crew of people receiving alerts.
If that make sense.
