Ah... I know where that confusion lies...

The first byte of the filename is replaced with 0xE5, which is the 
sigma character. THis shows it has been erased. It comes up on 
undelete as an "?" because it could be anything, so the undelete 
routine replaces it with the "anything" character to get you to type 
in a replacement for it.
