I'm not sure why people ever really expected %U to work when using security = share. Sha remode security by design doesn't really support the concept of users. Samba goes to great lengths to bridge the gap between user/pws in UNIX and share mode security.
You're best bet is to use 'security = user|domain|ads' and set 'map to guest = bad user' for guest access.
