This allows to calculate something like device independent (or "absolute") colour values; in a second step, the profile of an output device (monitor or printer) is used to transform the colour values into RGB or CMYK values appropriate for the monitor/printer.
The JPEG, TIFF and EPS formats allow to embed a profile in the files, and this profile allows to calculate the device independent colour values. A good start to learn more about ICC profiles is the website http://www.coloraid.de, and also http://www.color.org Abel
