I have experience only with virtualbox - you will install entire windows installation inside virtalbox (so you will need windows license for that), then in the virtual machine settings you check the "Enable USB" and "Enable USB 2.0", then you connect your scanner to your PC and click on button "Add filter from device" there and pick yor scaner there. Virtualbox will be now set to reroute that usb device to your virtualmachine, so inside the virtualized windows you will install ordinary windows drivers (and also perhaps software like USBsnoop to sniff communication over USB) and ordinary windows software that will work with your scanner.
