I don't know which platform is most stable for SAP DB, but a quick look into our Problem Tracking System gives an answer to the question "On which platform is SAP DB more stable?". In short, this platform does not exist. 65% of the bugs found so far are OS-independent, 18% of the bugs needed Windows and 16% of the known bugs occurred on a UNIX type OS (of which 50% occurred on all UNIX types, 10% on Solaris, 10% on True64, 8% on HP and 5% on Linux).
