There are a couple of different options for you.  First, you already have
the ability, which is actually required by most of the shippers, to enter
the weight and dimensions of each product.  The UPS and Fedex module use
those numbers to query their API to determine shipping costs.

If that isn't flexible enough, you can use the "ProductShipping" module,
which allows you to define one or more "carriers", and then assign explicit
shipping prices for every product.  So, you could define "normal" and
"expedited" carriers, and then set product A to cost $5 for Normal and $10
for Expedited.  Product B could be $15/$30 for the same options.
