Ah, it was a settings problem. I needed to go to /settings/ and select
"Custom Order" under Product Settings.

Now i'm getting the detail_customproduct.html template called.

I do think there is a need to be more consistent in the documentation
about what to call this kind of product. Product Settings clearly
shows this as "Custom Order", while 
http://www.satchmoproject.com/docs/svn/product.html
uses "Custom Product". This group uses "custom product" mostly to
refer to a custom product class.
