It'd be pretty easy, I think for you to try it locally on your checkout of Satchmo, see what effects there are, and perhaps report back on your findings and any issues that may arise. If it doesn't work out easily, you can just revert the changes you made to product/models.py. Of course, I could be overly optimistic on this.
