I see. The same GPL version 3 "or later" that you use for the rest files would be appropriate for the images. Please check the GPL HowTo <https://www.gnu.org/licenses/gpl-howto.html> for details. Another concept you'll need is copyrightable files. For a text format, those are files longer than 10-15 lines.
