Why a second one? Why not start/stop a source living in the same liq instance?

I can't talk for the stability and maturity of the pulseaudio code.
But I can assure you that the "id" parameter is always only for
identification in liquidsoap.

You can ignore these debugging messages. It just means that one source
was connected to another. Your icecast problem is somewhere else...
