I guess you are talking about audio archives and not about log archives...

output.file(
     %wav(stereo=true),
     "/mnt/archive/raw/%Y-%m-%d/%Y-%m-%d-%H_%M_%S.wav",
     on_close=fun(s)->system("qwavheaderdump -F #{s}"),
     reopen_when={0m0s},
     mksafe(radio)
)

this will hourly save a new audio archive file.

You need to install quelcom package to use qwavheaderdump (in case of any 
process stops, wav header will be correct)
You can remove on_close line, if you do not use it.
You could use other reopen_when intervals ({0m0s} is hourly, {0h0m0s} is daily.)
You can use other file directory and filenaming.
